Have your Cake and Eat it!

Apart from Christmas….I cannot think of a better week in the year than this one!  This week sees the return of National Espresso Day AND National Cake Day. I know, I know, what a perfect excuse for me to ‘research’ things for this blog!

So I’ve sampled lots and lots of the fine cakes here in China Fleet’s Brasserie sipped our range of sumptuous Cornish Coffee; including espresso, cappuccino, latte, macchiato, syrups skinny, large and small. Locally-based Cornish Tea & Coffee Company have won many awards including a Taste Of The West and whose customers include Richard Branson’s Virgin Group and Jamie Oliver’s restaurants – so I thought it would be rude not to indulge!

Our Chef here makes some of the tastiest cakes and I persuaded him to share his recipe for Carrot Cake. Why not give it a go and bake one…or like me…pop into the Brasserie and enjoy one he’s already made with a cuppa or two.

Carrot Cake Recipe

Ingredients

• 350g Muscarvado Sugar

• 350ml Vegetable Oil

• 6 Eggs

• 280g Peeled and Grated Carrot

• 200g Raisins

• Zest of 2 Oranges

• 350g Self Raising Flour

• 2 tsp Bicarbonate of Soda

• 0.5 tsp Cinnamon

Topping

• 125g Soft Butter (room temperature)

• 125g Caster Sugar

• 250g Low Fat Cream Cheese

Method

Preheat oven to 160 degrees. Mix the ingredients for the Carrot Cake (except the flour) together, in an electric mixing bowl (or by hand using a whisk). Once they are mixed well gradually add the flour. Pour the mix into a greased and lined tin/tray and bake for 40 minutes on 160 degrees. Once the cake is cooked take out and place on a cooling rack to cool.

While the cake is cooling, mix the soft cheese, sugar and butter together in a mixing bowl. It is very important that the butter is at room temperature before mixing otherwise it will make the mixture very lumpy. Once this is done, spread over the top of the carrot cake and enjoy!
